ABOUT Bael ka Sharbat or Bela Panaa RECIPE

Summer is that time of the year when our body craves some flavorful traditional drinks, chilled juices and sherbets made from seasonal fruits, herbs and spices. When I was a kid, we were forced to have bael ka Sharbat to keep our stomach cool and filled, guard us against the summer heat. Bael ka sharbat is known as bala panaa in Odia and is offered as summer juice to Lord Jagannath .

Ingredients Serving: 12

  1. 1 no ripe bael fruit
  2. 1/4 tsp crushed black pepper per glass
  3. 1/4 tsp black salt per glass
  4. sugar as per taste
  5. 1 inch grated mango ginger
  6. water as needed
  7. mint leaves for garnishing

  1. First break the bael fruit and scoop out the fruit pulp with the help of a spoon. Discard the hard skin.
  2. Mash the pulp and soak in double amount of water for 10 minutes. Now with the back of a spoon mash the pulp or you can use your hands to do this also.
  3. Sieve the soaked pulp with a heavy strainer by pressing it with the help of spoon. Remove seeds and discard insoluble fiber.
  4. Mix salt, crushed black pepper, grated mango ginger and sugar in sieved juice. Depending on the sweetness of the bael fruit, you have to add sugar. I have not added any sugar, as mine was more sweet.
  5. Pour into individual glasses and add some ice cubes or keep in refrigerator till you want to serve. Serve this chilled bael sharbat to get instant relief from the heat stroke during summer.
  6. You can adjust the amount of water and sugar as per your taste.
