ABOUT Mandira Meetha Palau/ Khichdi Bhoga/ Khichuri RECIPE

During Durga pooja, the most important food which is prepared and offered to Durga Maa is khichdi or khichuri. It is made with basmati rice, moong daal and lots of vegetables cooked in ghee or clarified butter and garnished with cashew and raisins. It is prepared on Ashthami and is consumed only after the pooja is over.

Ingredients Serving: 4

  1. 1 1/2 cup basmati rice soaked in water for half an hour
  2. 1 cup moong dal roasted and soaked in water for half an hour
  3. ½ cup carrot chopped
  4. ½ cup green peas
  5. ½ cup cauliflower cut into small pieces
  6. ½ cup green beans chopped
  7. 2 tbsp cashew nuts
  8. 2 tbsp raisins
  9. 1 tomato chopped
  10. 1 bay leaf
  11. 2-3 whole black pepper crushed
  12. 1 green chilli chopped
  13. 1 black cardamom
  14. 1 green cardamom
  15. 1 cinnamon
  16. Salt to taste
  17. 2 tbsp sugar
  18. 2 tbsp ghee/ oil
  19. 1 tbsp chopped cilantro
  20. 1 tsp turmeric powder

Instructions

  1. Take a pressure cooker and add ghee to it.
  2. Next add green chilies and allow it to sizzle.
  3. Add all the chopped vegetables and toss.
  4. Then add chopped tomatoes, turmeric powder and mix again.
  5. Next goes in rice and dal. Mix again.
  6. Add 4 cups of water, salt and sugar to taste.
  7. Gently stir with spatula.
  8. Cover the lid and cook on high for 2 whistles.
  9. Lower the flame and cook for 2 minutes. Switch off flame and allow pressure to drop completely.
  10. Open lid, add cashew nuts and raisins fried in ghee.
  11. Add chopped coriander leaves. Mix.
