Soak the green gram for 6 to 7 hours in sour buttermilk, add some water also as needed to soak properly
After 6 to 7 hours blend it to make a smooth paste along with ginger, green chillies and mint leaves
If needed then add 1 or 2 tbsp of water to blend, I didn't add any water to blend
Consistency should be like dal fritters
Now add cumin seeds, salt and 2 tbsp of oil in it and beat once to mix all ingredients properly and to make batter smooth
Heat a water pot, let the water comes to boil, grease a pan in which dhokla would be steamed
As steamer is ready, add baking soda in batter and mix properly and place in a steamer
Cook for 2 to 3 minutes on high flame and then for 15 minutes for slow flame
Check with toothpick, If comes out clean, then it's done, otherwise cook for another 2 to 3 minutes
Let it cool for 5 minutes, meantime prepare tempering
Take oil in a pan add oil and add mustard seeds to crackle, then add sesame seeds, curry leaves and green chillies, pour the temper on dhokla
Cut into small pieces and serve with ketchup
