Ingredients to make Whole moong dhokla

  • 1 cup whole green gram
  • 1 cup sour buttermilk
  • 4-5 green chillies
  • 1 inch ginger piece
  • Handful mint leaves
  • 1 tsp cumin seeds
  • 1 tsp baking soda
  • salt to taste
  • 2 tbsp oil
  • For tempering:
  • 2 tsp oil
  • 4 to 5 green chillies cut into slits
  • 1 sprig of curry leaves
  • 2 tsp of mustard seeds
  • 1 tsp of white sesame seeds
  • Pinch of asafoetida

How to make Whole moong dhokla

  1. Soak the green gram for 6 to 7 hours in sour buttermilk, add some water also as needed to soak properly
  2. After 6 to 7 hours blend it to make a smooth paste along with ginger, green chillies and mint leaves
  3. If needed then add 1 or 2 tbsp of water to blend, I didn't add any water to blend
  4. Consistency should be like dal fritters
  5. Now add cumin seeds, salt and 2 tbsp of oil in it and beat once to mix all ingredients properly and to make batter smooth
  6. Heat a water pot, let the water comes to boil, grease a pan in which dhokla would be steamed
  7. As steamer is ready, add baking soda in batter and mix properly and place in a steamer
  8. Cook for 2 to 3 minutes on high flame and then for 15 minutes for slow flame
  9. Check with toothpick, If comes out clean, then it's done, otherwise cook for another 2 to 3 minutes
  10. Let it cool for 5 minutes, meantime prepare tempering
  11. Take oil in a pan add oil and add mustard seeds to crackle, then add sesame seeds, curry leaves and green chillies, pour the temper on dhokla
  12. Cut into small pieces and serve with ketchup

My Tip:

If you don't want to add butter milk..then it can be soak in water as well. Buttermilk gives awesome taste Do not overcook
