ABOUT Roasted Aam Panna RECIPE

Sharing one of rare, heirloom recipe of my grand mother which is lost nowadays after the invention of the cooker, where my granny used to roast raw mangoes on fire.Beat the heat with Aam panna made from roasted Mango.It is a popular summer cooler in the Northern parts of India. It is a lovely refreshing drink and is also known to fight the intense heat during the summer months.

Ingredients Serving: 4

  1. 2 large raw mangoes
  2. 4 glasses of water approximately
  3. 2 cups crushed ice
  4. 1/2 cup sugar (adjust)
  5. 1/2 tsp black salt/kala namak
  6. 1.5 teaspoons cumin powder( lightly roasted and powdered)
  7. 1 cup fresh mint leaves
  8. 1 Green chilli ,optional
  9. 1/4th tsp dry mint powder
  10. FOR GARNISH
  11. 2 tsp gram flour boondi
  12. 2 spring of mint leaf

Instructions

  1. To roast the mango: Wrap the mango with a foil and roast it in the oven at 350 degrees F till the flesh is soft.
  2. Alternatively my favorite way is to roast it in open fire with the help of a tong.
  3. This adds a wonderful smoky flavor to the drink.
  4. Remove the black charred peels of the roasted mangoes.
  5. Mash the pulp through the strainer and squeeze the pulp.
  6. Blend rock salt, sugar, roasted cumin, black pepper and mint leaves with little water.
  7. Add this paste to the mango pulp and mix well till smooth, add in 4cups of chilled water.
  8. Serve chilled with ice and garnish, fresh mint leaves,bhoondi and mint powder.
  9. Cheers! Enjoy endlessly!
