Ingredients Serving: 6

  1. For the Batter:1 cup Besan
  2. Salt to taste
  3. 1 teaspoon red chilli powder
  4. Water as needed
  5. For the mixture: 2 large potatoes, boiled and mashed
  6. 2 green chillies, finely chopped
  7. 1/2 teaspoon garam masala
  8. Salt to taste
  9. 1 teaspoon red chilli powder
  10. 1/2 inch ginger, grated
  11. 7 to 8 curry leaves
  12. 1 tablespoon green coriander leaves, chopped

Instructions

  1. For the besan batter: Take the besan in a bowl.
  2. Add salt and 1/2 teaspoon red chilli powder.
  3. Add water and make a thick paste-batter.
  4. Boil and mash the potatoes.
  5. Add salt, red chilli powder, chopped green chillies, garam masala, grated ginger, curry leaves, green coriander leaves.
  6. Mix and make small balls.
  7. Heat oil for deep frying in a pan.
  8. Dip each ball in the besan batter
  9. Let it be coated well.
  10. Deep fry till half cooked.
  11. The colour should be light.
  12. Drain in a sieve.
  13. Fry all the potato balls like this.
  14. Now, slightly flatten each ball.
  15. Deep fry again, on low flame.
  16. Let the colour change to golden brown
  17. The corners will turn crunchy.
  18. Remove excess oil on tissue paper.
  19. Serve with pav and mint-tamarind chutney.
