  • sugar- 1 tablespoon
  • turmeric- 1 teaspoon
  • baking soda- 1/4 teaspoon

  • Left over fermented idli/dosa batter - 1/3 cup
  • For tempering: refined oil- 1-2 teaspoons
  • mustard seeds (rai)- 1 teaspoon
  • cumin seeds (jeera)- 1 teaspoon
  • curry leaves- 15 to 20
  • Green chilies- 1 to 2 slit length wise
  • water-1/3 cup
  • salt- 1/2 teaspoon
  • sugar- 1/2 tablespoon

How to make Sprouted Green Moong Dhokla

  1. Grind sprouted/overnight soaked green moong along with ginger, green chilies, salt, sugar, citric acid, soda. Add as little water as possible.
  2. Once done, add fermented idli/dosa batter and give whip in blender till they mix well.
  3. Meanwhile, keep the steamer/vessel with water on the gas stove for heating. The water level should be sufficient so that it does not exhaust before the cooking is done.
  4. Add eno/fruit salt, gently fold the batter.
  5. Pour into a greased container.
  6. Place the tin in the steamer, steam for 25-30 minutes.
  7. Prepare the tempering by heating 1 teaspoon oil.
  8. Add mustard seeds, cumin seeds, curry leaves, green chillies.
  9. Switch off the flame, add 1/3 cup water, salt to taste, sugar 1 tablespoon to pan.
  10. Pour the tempered water onto the steamed dhoklas.
  11. once cooled, cut into pieces, garnish liberally with grated coconut and chopped coriander. serve with mint chutney.

My Tip:

Since batter made of only sprouted moong gives dense dhoklas, I have added fermented left over idli/dosa batter to get the airiness. You can also try with an equal amount of curd, and allow the batter to stay in warm condition for 30-45 minutes for some fermentation, before adding fruit salt and placing in the steamer.
