ABOUT Sprouted Green Moong Dhokla RECIPE

A healthy and tasty way to include whole lentils in a protein packed breakfast.

Ingredients Serving: 8

  1. Sprouted green gram (moong)- 1 cup(soaked overnight)
  2. Green chillies- 2
  3. Ginger- 1 small piece
  4. Salt- to taste
  5. Sugar- 1 tablespoon
  6. Turmeric- 1 teaspoon
  7. Baking soda- 1/4 teaspoon
  8. Citric acid- 1 teaspoon
  9. Eno (fruit salt)- small sachet (5gm)
  10. Left over fermented idli/dosa batter - 1/3 cup
  11. For tempering: refined oil- 1-2 teaspoons
  12. Mustard seeds (rai)- 1 teaspoon
  13. Cumin seeds (jeera)- 1 teaspoon
  14. Curry leaves- 15 to 20
  15. Green chilies- 1 to 2 slit length wise
  16. Water-1/3 cup
  17. Salt- 1/2 teaspoon
  18. Sugar- 1/2 tablespoon

Instructions

  1. Grind sprouted/overnight soaked green moong along with ginger, green chilies, salt, sugar, citric acid, soda. Add as little water as possible.
  2. Once done, add fermented idli/dosa batter and give whip in blender till they mix well.
  3. Meanwhile, keep the steamer/vessel with water on the gas stove for heating. The water level should be sufficient so that it does not exhaust before the cooking is done.
  4. Add eno/fruit salt, gently fold the batter.
  5. Pour into a greased container.
  6. Place the tin in the steamer, steam for 25-30 minutes.
  7. Prepare the tempering by heating 1 teaspoon oil.
  8. Add mustard seeds, cumin seeds, curry leaves, green chillies.
  9. Switch off the flame, add 1/3 cup water, salt to taste, sugar 1 tablespoon to pan.
  10. Pour the tempered water onto the steamed dhoklas.
  11. once cooled, cut into pieces, garnish liberally with grated coconut and chopped coriander. serve with mint chutney.
