ABOUT Vegetable roti RECIPE

A roti that is made up of a generous filling of vegetables and potatoes, a perfect option for daily breakfasts at home.

Ingredients Serving: 3

  1. 220 grams Whole wheat flour
  2. A pinch of salt
  3. Warm water to knead
  4. 2 potatoes
  5. 1 Tomato finely chopped
  6. 1 Onion finely chopped
  7. 1 Carrot finely chopped
  8. 1 capsicum finely chopped
  9. 2 green chillies minced
  10. 1 tablespoon Ginger-Garlic Paste
  11. 1/4 teaspoon turmeric Powder
  12. 1/2 teaspoon red chilli powder
  13. 1 teaspoon Cumin Seeds
  14. 2 tablespoon Oil
  15. Handful of coriander leaves finely chopped
  16. Salt to taste

Instructions

  1. Wash the Potatoes and put them in a pressure cooker with a little water to cook. Once cooked, drain water and mash them.
  2. In a cooking bowl, pour in a little water, put in the chopped capsicum, carrot and beans. Let it cook for 4-5 minutes.
  3. Heat the oil in a pan, put in the cumin seeds and let them crackle. Next, put in the green chillies, ginger-garlic paste, along with the tomato and onion.
  4. Saute and cook them together for 2-3 minutes.Then, add in the rest of the vegetables and cook on a low flame till they are tender.
  5. Now, add in the mashed potatoes, coriander leaves, red chili powder, turmeric powder and salt. Stir well and cook for another 2 minutes or so.
  6. Also knead the flour with the warm water and make a dough. Divide the dough into balls of equal size.
  7. Take a dough ball and roll it into a small round and thin shape. Spread ghee on the surface of the roti and place 2 spoons of the vegetable mixture on top.
  8. Gather the edges of the roti with the vegetable mixture and make a small bag of it. Using your palms, push the dough into a round thick shape again. Roll this dough ball into a roti shape.
  9. Heat a tawa and place the vegetable roti on it, let the bubbles form then flip the roti and cook the other side. Flip the roti again to other side and cook for another minute.
  10. Transfer the roti to a plate and smear with a little ghee. Follow this process with the other dough balls as well.
  11. Serve this Vegetable Roti with homemade chutney or tomato ketchup.
