ABOUT Tetor Dal (Yellow Lentil with Bitter Gourd) RECIPE

Teto in Bengali means bitter. This is a traditional Bengali recipe where yellow lentil is cooked with Lauki (bottle gourd) and bitter gourd. Sugar is added to balance the taste. It is specially cooked during summer to keep the body cool.

Ingredients Serving: 4

  1. Moong dal/Yellow lentil 1/2cup
  2. Bitter gourd 1 medium cut into rounds
  3. Bottle gourd (Lau or Lauki) 8-10 large cubes
  4. Ginger 1tsp(grated)+1tsp(julienne)
  5. Green chilies 2(Optional)
  6. Celery seed 1/2tsp
  7. Turmeric powder /2tsp
  8. Salt to taste
  9. Sugar to taste
  10. Oil 3 tbsp
  11. Ghee 2 tsp

Instructions

  1. Cut the bitter gourd into 1/2cm thick rounds. If the seeds are ripe and hard, discard the seeds.
  2. Peel and wash bottle gourd, and cut into large cubes.
  3. Wash the yellow lentil thoroughly, till the water runs clear. In a pressure cooker put the lentils and cubed bottle gourd and water. Cook on high heat till 2 whistles. Remove from heat. Wait till the pressure releases.
  4. In a pan or kadhai heat 3tbsp of oil and fry the bitter gourd pieces. Add salt and turmeric powder while frying. Take out the fried bitter gourd. Keep aside.
  5. In the same pan add celery seeds or Randhuni. If can't get either of these, use Bengali five spice mix or Paanch Foron.
  6. Add the grated ginger and cook for 1min. Add the boiled lentil and bottle gourd, turmeric powder and water. The amount of water depends on the thickness you want. Add the fried bitter gourd.
  7. As it boils add sugar. Check for seasoning and adjust accordingly. Switch off heat add ghee. Serve hot with steamed rice.
