Mango Lemon Cashew Popsicles

Ingredients to make Mango Lemon Cashew Popsicles

  • 1 cup cashew Milk
  • 1 mango, diced
  • 2 tsp lemon juice
  • 4-5 tbsp Maple syrup/ honey
  • 4 tbsp pomegranates

How to make Mango Lemon Cashew Popsicles

  1. Combine all the ingredients, except pomegranates, in a blender and whiz until thick and silky smooth. Taste and adjust for sweetness.
  2. Stir in the pomegranate arils and pour into your popsicle molds. Freeze for 8-10 hours. Unmold and enjoy!

My Tip:

For making cashew milk, simply soak 1/2 cup cashews overnight, rinse them well in the morning and blend them with 1 cup milk until smooth.
