INDIAN SPICED SHREDDED CHICKEN SALAD SANDWICH RECIPE

  1. 8 bread rolls or buns sliced in half
  2. 500 gms (1 lb) boneless chicken breasts cut into strips
  3. 1 tbsp ginger garlic paste
  4. 2 tsp cumin seeds
  5. 1 tsp black pepper
  6. 2 whole dried red chili
  7. 2 cloves
  8. 2 cardamom
  9. 1/4 inch cinnamon stick
  10. 3 tbsp yogurt
  11. salt to taste
  12. 2 tbsp spoon oil
  13. 5 tbsp mayonaise
  14. 1 tsp mustard paste
  15. 2 cucumbers chopped
  16. 2 tomatoes chopped
  17. 4 tbsp chopped lettuce
  18. 2 tbsp olive oil
  19. lettuce leaves
  20. tomatoes sliced

Instructions

  1. Dry grind cumin seeds, red chili, black pepper, cloves, cardamom and cinnamon stick to a fine powder.
  2. Apply the ground powder to the chicken along with ginger garlic paste, salt and yogurt. Cook till done either on low flame or in a pressure cooker. Once the cooked chicken cools down, shred it with hands.
  3. Heat oil in a pan and add the shredded chicken for a 2-3 minutes. Add the mayonnaise, olive oil, mustard paste, cucumbers, tomatoes and lettuce to the shredded chicken.
  4. Toast the inside of the buns. Place a lettuce and add the shredded chicken on bottom halves of buns. Top it with couple of sliced tomatoes and top halves of the buns. And the chicken salad sandwich is ready.
