ABOUT Healthy Chickpeas Flour (Besan) Quiche RECIPE

We use to have eggs (fried, boiled, poached etc ) and besan Cheelas for breakfast so this chickpea flour /besan quiche actually combines the best of both to form a wholesome, nutritious and fibrous.

Ingredients Serving: 6

  1. Chickpesa Flour -2 cups
  2. Baking powder-1 tablespoon
  3. Eggs-2
  4. Freshly milled black pepper-1 teaspoon
  5. Red chilli powder-1/4 teaspoon
  6. Dried rosemary-1/2 teaspoon
  7. Dried oregano seasoning -1 heaped teaspoon
  8. White sesame seeds- 1 teaspoon
  9. Flax seeds-1 tsp
  10. Salt-to taste
  11. Sugar-1/2 teaspoon
  12. Chopped fresh coriander leaves-1tablespoon
  13. Steamed corn kernels -3/4 cup
  14. Grated ginger-1teaspoon
  15. Finely chopped garlic-1tsp
  16. Finely chopped onions-2, medium sized
  17. Finely Chopped Green Chillies-2
  18. Cold Milk -1/4th cup
  19. Grated Cheese (Cheddar / Mozarella)-2-3 tbspns
  20. Cream- 2 tablespoons
  21. Water-3/4 cup
  22. Olive oil-3 tablespoons

Instructions

  1. Pre -heat oven to 150 Degree Celsius.
  2. In a mixing bowl, put in the besan, baking powder, dried rosemary, pepper powder and some salt.
  3. Add 1 tablespoon olive oil and the water and whisk to make a smooth batter.
  4. Add the fresh coriander leaves and leave the batter to rest for 15-20 minutes.
  5. Get the chopped ginger, garlic, onions and green chillies together.
  6. In a non-stick pan, heat the rest of the olive oil.
  7. Add the ginger, garlic and green chillies and saute.
  8. Add the sesame seeds and stir in.
  9. Add the chopped onions and fry till translucent.
  10. Add the steamed corn, the sugar, salt to taste and the dried oregano seasoning, red chilli powder and saute together for about a minute or two.
  11. Remove from heat and leave to cool.
  12. Beat the eggs until frothy.
  13. Add the cold milk and beat again.
  14. Now slowly add the besan batter into the cooled corn mixture and stir in.
  15. Gently also fold in the egg-milk mix into this .
  16. Pour this entire batter into a greased cake /baking tin.
  17. Sprinkle the grated cheese on top.
  18. Dot with blocks of thick cream over this.
  19. Sprinkle some flax seeds on top of this.
  20. Bake in the pre heated oven at 125-130 Degree C for 25-30 minutes till browned on top.
  21. Remove from oven after the stipulated time and after doing the knife test to ensure the quiche is cooked from inside.
  22. Leave to cool.
  23. Cut into neat squares and serve with tomato ketchup or green chutney on the side.
