ABOUT Solachi Kadhi RECIPE

Sol Kadi is a drink which is made from Kokum and coconut milk. Sol kadi cools down the digestive system after eating spicy food. This is a famous drink from Maharashtra's Konkan region.

Ingredients Serving: 2

  1. 10-15 kokum pods
  2. 1 Cup Coconut Milk
  3. 1 green chilli
  4. 2 garlic cloves
  5. 2 tablespoon Coriander
  6. 1/2 teaspoon cumin powder
  7. Salt to taste
  8. A few mint leaves, for garnish

Instructions

  1. First, soak kokum pods in 1/2 cup warm water for 30 to 45 minutes.
  2. Squeeze the pods to extract the juices, drain the pods and retain the warm water with the extract in it.
  3. In a mortar and pestle, smash together the green chili, cumin seeds, garlic cloves, coriander leaves and salt.
  4. Crush them roughly till they come together.
  5. Add the coconut milk, kokum concentrate, crushed garlic and chilli spice paste and stir well to combine.
  6. Taste it and adjust seasoning as required.
  7. Garnish the Solkadhi with mint leaves or chopped coriander and place in the fridge.
  8. To make kokum sorbet :
  9. In a bowl add 2 to 3 spoons of Kokum concentrate which earlier extracted
  10. Dilute it with 1+1/2 cups of water
  11. Add salt, sugar, and cumin powder
  12. Now transfer this to a metal/steel container
  13. Place this in freezer for few hours
  14. Once it's set fully, scrape it every hour with fork and place it back
  15. Repeat this twice
  16. Kokum sorbet is ready
  17. You can make ice cubes also with this Kokum liquid
  18. Serve chilled Sol kadi topped with kokum sorbet / kokum ice cubes
