Besan borar jhal is a traditional Bengali delicacy.

Ingredients Serving: 4

  1. Besan - 1/2 cup
  2. Baking soda- pinch off
  3. Chili powder- 1tsp
  4. Turmeric powder- 1tsp
  5. Salt as required
  6. Cumin Powder - 1tsp
  7. Coriander powder- 1tsp
  8. Potatoes- 2 ,cut into quarters
  9. Onion - 1, thinly sliced
  10. Ginger +green chili paste - 1 and1/2tsp
  11. Garam masala- 1tsp

Instructions

  1. Take a bowl. Add besan,1/2 tsp each chili, turmeric powder, Salt to taste and pinch of baking soda .....add water gradually and make a thick but flowing batter.
  2. Now heat a kadhai with 3 tbsp oil ..put 1 tsp full batter into medium hot oil ..fry both sides till golden brown.
  3. Take out and place it on a paper towel for absorbing extra oil.
  4. Heat the same kadhai with remaining oil..add bay leaf and cumin seeds.once it's sputter, add potatoes, sprinkle some salt.
  5. Now add onion.stir for a minute.
  6. Now add ginger and green chili paste and all dry spices except Garam masala...stir for a minute.
  7. Now add a cup of water .give a nice stir.once it starts bubbling turn down the flame and let it cook for 6 -7 mins or till potatoes cooked well.
  8. When potatoes become soft and gravy reduced, add garam masala. Check seasoning..keep gravy as per your desired consistency.
  9. Pour this hot gravy over the Besan fritters.
  10. Serve it with steam rice
