Ingredients Serving: 4

  1. 2 cups Red Kidney Beans/Rajma boiled
  2. 2 cups Plantain boiled
  3. 1 Bay leaf
  4. 2 Black cardamoms
  5. 2 inches Ginger crushed finely
  6. 5 cloves garlic crushed and chopped finely
  7. 2 green chillies chopped finely
  8. 1 tsp Red chilli powder
  9. 1 tsp Coriander powder
  10. 1/2 tsp Cumin powder
  11. 1 tbsp amchoor powder
  12. 1 tsp garam masala
  13. 1 tsp black pepper powder
  14. Salt to taste
  15. 1/2 cup coriander leaves chopped
  16. 1/4 cup mint leaves chopped
  17. 1 Lemon
  18. 1/2 cup gram flour for dusting
  19. 1/2 cup bread crumbs
  20. 1/2 cup hung curd

Instructions

  1. Soak Kidney beans for 5-6 hours or overnight and pressure cook with salt, bay leaf, and black cardamom till soft. Drain the water, discard the bay leaf, black cardamom and grind to a smooth paste.
  2. Boil the plantain, peel and mash it.
  3. Mix ground kidney beans with boiled plantain. Add the crushed ginger, garlic & green chilies, red chili powder, coriander powder, cumin powder, amchur powder, garam masala and mix well.
  4. Now add chopped coriander and mint leaves to it. Squeeze the juice of a lemon, check the salt and mix well.
  5. If you find your mix a little sticky, you can add bread crumbs to bind everything together. The dough should be firm. Keep aside.
  6. Mix hung curd, salt and the chopped stems of coriander and mix well.Now make an equal size of balls from the dough. Take a dough, press with your fingers to form a cup.
  7. Spoon a heaped teaspoon of the thick yogurt filling into the cup. Carefully cover it from all sides.Roll them on gram flour very gently on both sides. Repeat the process for all the dough.
  8. Now heat a non-stick Tawa and add 2 tablespoons of oil in it.Shallow fry the kebabs on both sides on low heat till golden.
  9. Serve with some spicy chutney of your choice and enjoy these exotic, melt in the mouth kebabs from the Royal Kitchens of Hyderabad graciously stuffed with hung yogurt, green chilies, and coriander.
