Whole Wheat Banana Bread

Ingredients to make Whole Wheat Banana Bread

  • 11/2 cups - whole wheat flour
  • 1/2 cup - caster sugar
  • 3 - medium bananas (with brown spots on skin)
  • 1 - large egg
  • 1 teaspoon - vanilla extract
  • 1/2 teaspoon - baking soda
  • 1 teaspoon - baking powder
  • 1/2 cup - vegetable oil

How to make Whole Wheat Banana Bread

  1. Preheat the oven to 180 degrees centigrade. Grease and line a loaf pan with baking paper.
  2. Peel the bananas and mash them well using a fork until smooth.
  3. In a medium bowl add oil and sugar. Crack an egg into the bowl. Beat well until sugar has dissolved. Now add vanilla extract and mix well. Add the mashed bananas and mix to combine.
  4. Sift together the flour, baking soda and baking powder a couple of times. To this add the wet ingredients. Mix until just combined. Do not over mix the batter.
  5. Spoon into the loaf pan and bake for 50 minutes or until a tooth pick inserted into the middle comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.
  7. Cut into thick slices and enjoy with a cup of tea.

My Tip:

You can use granulated sugar or brown sugar for caster sugar. To make the bread egg free, replace egg with flax egg or add 3 tablespoons of butter milk. To make flax egg paste, grind the flax seeds into a fine powder. Add 1 tbsp flax seed powder to 3 tbsp of water and whisk until it becomes gelatinous. You can freeze the leftover bread in slices wrapped tightly in foil paper.
