ABOUT Meethe Baingan RECIPE

A very easy recipe idea for lunch done in just a few minutes. It goes well with both rice and rotis. Do not go by it's name, as it does not have a single grain of sugar in it. It is named so in Hyderabad because it does not have much of the chilli and is cooked with lots of onions and few spices only. And because onions mask the effect of hot pepper whatever is present in the curry, this dish is named as meethe baingan.

Ingredients Serving: 4

  1. Eggplant, small - 1/2 kg
  2. Onions, sliced - 4
  3. Salt - 1 tsp
  4. Ginger garlic paste - 1 tsp
  5. Red chilli powder - 1 tsp
  6. Turmeric - 1/2 tsp
  7. Coriander leaves, chopped - a handful
  8. Oil - 2-3 tbsp
  9. Coriander powder = 1 tsp
  10. Cumin powder - 1 tsp
  11. Water - 1/4 cup

Instructions

  1. Wash and cut the eggplants lengthwise into 6 segments each from a single one.
  2. Keep these immersed in salted water until ready for cooking.
  3. In a pan, heat the oil and saute the onions. Add all the spices one by one followed by the eggplant pieces.
  4. Cover and simmer after adding just about 1/4 cup of water on medium flame. It is ready in about 18-20 minutes.
  5. Garnish with coriander and serve hot with rice or rotis.
