Meethe Baingan

Ingredients to make Meethe Baingan

  • Eggplant, small - 1/2 kg
  • onions, sliced - 4
  • salt - 1 tsp
  • ginger garlic paste - 1 tsp
  • red chilli powder - 1 tsp
  • turmeric - 1/2 tsp
  • coriander leaves, chopped - a handful
  • oil - 2-3 tbsp
  • coriander powder = 1 tsp
  • cumin powder - 1 tsp
  • water - 1/4 cup

How to make Meethe Baingan

  1. Wash and cut the eggplants lengthwise into 6 segments each from a single one.
  2. Keep these immersed in salted water until ready for cooking.
  3. In a pan, heat the oil and saute the onions. Add all the spices one by one followed by the eggplant pieces.
  4. Cover and simmer after adding just about 1/4 cup of water on medium flame. It is ready in about 18-20 minutes.
  5. Garnish with coriander and serve hot with rice or rotis.
