ABOUT Classic High Tea Cake RECIPE

A vanilla sponge cake with roasted almonds, topped with strawberry jam and dusted with sugar.

Ingredients Serving: 10

  1. Flour - 120 gm
  2. Sugar, powdered - 120 gm
  3. Butter, softened - 100 gm
  4. Eggs - 2
  5. Vanilla - 1 tsp
  6. Baking powder - 1 tsp
  7. Almonds, roasted and grounded coarsely - 20
  8. Strawberry Jam and candy for decoration


  1. In a bowl mix butter and sugar till fluffy. Beat the eggs and vanilla essence and add to butter sugar mixture, beat again till creamy.
  2. Add baking powder in flour and sieve gradually in butter sugar egg mixture. Gently fold with a big spoon well and add almond powder and fold again.
  3. Grease a baking cake tin with butter and dust with flour, pour the cake mix in it. Bake in a preheated oven for 180 degrees for 30mins.
  4. Cool on a grill rack and decorate with a thick Strawberry Jam layer, powdered sugar and candies. Serve warm with tea or coffee.
