Wash the lemons and dry nicely using a cotton cloth. Cut into small pieces and fill these in clean jars.
Add salt and turmeric powder and mix well. You can keep this mixture for a week and proceed with seasoning or can season it the same day.
Take a pan with hot gingily oil, add mustard seeds, hing and switch off the stove. Once it's warm add turmeric powder, red chili powder, mustard and fenugreek seeds powders. Mix.
Pour this on the lemon pieces. Using a wooden spatula mix nicely. You can start eating it after a week.
