Potato Sticks with Mustard Seeds

Ingredients Serving: 5

  1. 8 medium potatoes
  2. 6 tbsp olive oil
  3. 2 garlic cloves finely chopped
  4. 1 tbsp finely chopped ginger
  5. 1 tbsp yellow mustard seeds/rai/sarson
  6. 1/2 tbsp salt
  7. 1/4th tbsp black pepper powder

Instructions

  1. Peel the potatoes and cut them crosswise into 1/4th thick sticks
  2. Boil till tender, drain and transfer carefully to a platter, using a wide spatula to avoid breaking the sticks.
  3. Put the oil in a frying pan over a moderate-low heat, when hot, add the ginger and garlic and stir for about a minute, till it begins to sizzle.
  4. Add the mustard seeds, salt and pepper and cook, stirring for 1-2 minutes, till the garlic is pale golden.
  5. Spoon the contents of the pan over potatoes, garnish with coriander leaves and serve hot.
