ABOUT Curry Leaves Powder / Karuvepallai Podi RECIPE

Commonly used as seasoning, this leaf adds a special flavour to every dish. There is more to the humble curry leaf than simply flavour. Ingredients Serving: 10

  1. Washed and cleaned, tightly packed curry leaves - 1 Cup
  2. Red dry chilies, according to your spice level or - 7 - 8
  3. Urad dal - 1/4cup
  4. Chana dal - 2 tbsp
  5. Hing - 1/2 tsp
  6. Mustard seeds - 1 tsp
  7. Salt to taste
  8. Jeera - 1 tsp
  9. Pepper -1 tsp
  10. Grated dry coconut - 2 tbsp (optional)
  11. Oil -1 tsp for frying

Instructions

  1. Heat a pan with half tsp oil. Once hot, add mustard seeds, hing, red chilies, jeera, pepper and fry for two minutes. Remove on a plate.
  2. Dry roast dals till golden brown and remove on the same plate.
  3. Add rest of the oil and fry curry leaves till they turn crisp. Add coconut and fry till they turn light brown. Mix all. Add salt.
  4. Grind this mixture without adding water to make a fine powder.
  5. Store and enjoy with hot steamed rice and little ghee.
