ABOUT Egg less cake in pressure-cooker RECIPE

I made it on mothers day for my mother, she does not eat egg and there is no oven at her home.

Ingredients Serving: 4

  1. 1 cup Maida
  2. 1/4 cup Butter
  3. 4 tbsp Sugar Powder
  4. 100 gms Condensed Milk
  5. 20 gms Chocolate powder or 1/2 cup
  6. 1/2 tsp Baking powder
  7. 1/2 tsp Baking soda
  8. Few drops of lemon juice
  9. Few drops of vanilla essence
  10. icing sugar as required .
  11. almonds as required .
  12. fruit sauce as required
  13. 1/2 cup milk or as required

Instructions

  1. Sieve maida with salt, baking powder and baking soda.
  2. Add condensed milk, vanilla essence and chocolate once the sugar gets dissolved into the butter, keep on adding the maida mixture into the batter and whisk it for 2-3 minutes (remove all the lumps from the batter).
  3. Lastly, add lime juice, mix and immediately pour cake mixture in the baking tin.
  4. While making cake in the cooker, the base of the cooker and the baking dish should not come in contact. Else the cake might get burnt from the base.
  5. To prevent this we spread 1 cup salt at the base of the cooker or first put one empty pot in a pressure cooker and on the top of empty pot put the cake tin.
  6. Keep the cooker on high flame for 2 minutes after spreading salt in it to pre-heat it.
  7. Close the lid of the cooker, without putting the whistle. Bake it for about 20-25 minutes on low heat or till done.
  8. Open the lid, and test the Cake with a fork or a knife. If the knife comes out clean, then your Cake is completely baked.
  9. Let it cool down for a while and then take it out from the container by separating it from the corners with the help of a knife.
  10. Allow the cake to cool down for 10 minutes.Top with icing sugar, almonds and serve with fruit sauce.
