ABOUT Achari Tawa Vegetable RECIPE

This is quick mix vegetable stir fry Indian Style which can be paired with any kind of bread, naan or parathas. This is a smart way of making those family members eat vegetables who don't like them. It is spicy and little tangy. One can make it with any combination of greens one likes and not just those which I used.

Ingredients Serving: 3

  1. Cauliflower florets : 8-10
  2. Potato: 1 cut into wedges
  3. Eggplant : 1/2 cut into long pieces
  4. Okra / Bhindi : 5-6 pieces
  5. Green / red bell pepper : 1 each, diced
  6. Beans : 8-10 pieces
  7. Baby carrots : 5-6
  8. Onions : 2 sliced thinly
  9. Ginger paste : 1 tsp
  10. Pav bhaaji masala : 1 tbs
  11. Mixed vegetable pickle : 1 tbs
  12. Lemon juice : 2 tsp
  13. Chopped green chilies : 3-4
  14. Turmeric powder : 2 tbs
  15. Tomato sauce / hot and sweet sauce : 1 tbs
  16. Red chilli Powder : 1/2 tsp
  17. Butter : 2 tbs
  18. Oil : 1 tbs
  19. Salt and sugar to taste

Instructions

  1. For the beans and okras keep them whole and just chop off their ends. Dice the bell peppers. Chop the baby carrots into 2 long halves. Smear the vegetables with salt and turmeric powder.
  2. Heat a little oil in a tawa and fry the vegetables in batches. Fry them till they get a nice colour and texture, take them out when they are half done. The vegetables should have some crunch.
  3. Now in the same tawa or in a kadhayi heat 1 tablespoon of butter and a spoon of oil together. Add sliced onions and fry them till they are soft. Now add ginger paste and cook it. Add turmeric powder and red chilli powder and saute well.
  4. Add all the fried vegetables and give a nice stir. In a small bowl dissolve the pav bhaji masala and add it to the vegetables and mix it well.
  5. Add the hot and sweet sauce, mix veg achaar, chopped green chilies and lemon juice. Stir them together with vegetables.
  6. Add salt and little sugar and give a final stir THEN switch off the stove/gas. The vegetables should be little crunchy when you take out the final dish.
  7. Add some more lemon juice and rest of the butter on the top. Serve it with roti or paratha.
