Pork Pickle

Ingredients to make Pork Pickle

  • Boneless pork - 250 grams
  • Dry red chilies - 15
  • Kashmiri chilli powder - 1 teaspoon
  • turmeric powder - 1 teaspoon
  • cumin powder - 1 teaspoon
  • Dry mango or aamchur powder - 1 teaspoon
  • ginger, finely chopped - 1/2 teaspoon
  • garlic, finely chopped - 1/2 teaspoon
  • Curry leave - 2 sprigs
  • asafoetida or hing - 1/2 teaspoon
  • vinegar - 1/2 Cup
  • salt as per taste

How to make Pork Pickle

  1. Pressure cook boneless pork meat with 2 cups of water for 1 whistle on medium flame. After pressure settles down open the cooker and take out pork in plate. Cut it into small cubes
  2. Boil red chilies and make a thick paste.
  3. In a bowl mix red chilli paste, kashmiri chilli powder, turmeric powder, cumin powder, aamchur powder and marinate the pork for 30 minutes.
  4. Heat two teaspoons of oil in a wok and add chopped ginger, chopped garlic, curry leaves and asafoetida (Hing). Keep stirring and fry till the raw smell goes and now add the marinated pork.
  5. After 2 min of frying over low flame add half cup vinegar and salt as per taste. After 5 minutes remove the wok from gas and cool it completely and put the pork in a glass jar.

My Tip:

Keep the glass jar with achar in direct sunlight for 1 day and then have it.
