ABOUT Uttappam Platter RECIPE

Uttapam is a thick pan cake made with thick dosa batter. Unlike the normal crispy thin dosa this is spongy and soft. This is a famous traditional South Indian breakfast or dinner. Here I have used the leftover plain dosa batter that i shared earlier on this platform.

Ingredients Serving: 2

  1. For dosa batter : 1 cup : Urad gota
  2. 1.5 cups : Sona masoori rice
  3. 1.5 cups : Long grain rice
  4. 1 tsp : Fenugreek seeds
  5. Salt to taste
  6. For Uttappam : 2.5 cups : Thick dosa batter
  7. 2 tbsp : Oil
  8. For toppings : 2 tbsp : Onion finely chopped
  9. 2 tbsp : Tomato, finely diced
  10. 2 tbsp : Bell pepper (I used yellow)
  11. 2 tbsp : Carrot, peeled and grated
  12. 2 tbsp : Coriander, chopped
  13. 1 tbsp : Green chilies, finely chopped
  14. 1 tbsp : Mozzarella cheese, grated
  15. Big pinch : Italian seasoning
  16. For mixed vegetable uttappam : 2 tbsp : Onion, tomato, carrot, coriander leaves

Instructions

  1. For dosa batter: Wash and soak all the ingredients mentioned in dosa list except salt. Grind them into smooth batter adding enough water. Ferment the dosa batter for 4 to 6 hours. Later add salt adjust it's consistency and make dosas.
  2. Heat the dosa pan, once it becomes smoking hot slightly grease the pan and add a ladle full batter and make the dosa like uttappam. Just spread the dosa at the centre to spread the batter evenly if needed. Do not make concentric circles.
  3. Drizzle half a teaspoon of oil at the top and sides. Now the dosa starts to form holes on top.
  4. Add the sliced veggies or topping of your choice. If you like the dosa to be spicy add some chopped green chillies.
  5. Once the base of the dosa becomes golden flip the dosa carefully and cook the otherside of the dosa for a minute.
  6. Here I made one mini uttappam with onion, one with carrot cilantro green chillies, one with yellow bell pepper cheese italian seasoning, one with tomato green chilli coriander and the last one was mixed vegetable uttappam.
  7. Use your imagination and experiment on flavors. My kids love banana cinnamon and nutella ones as well.
  8. Serve hot with any type of Sambar or Chutney of your choice.
