ABOUT Stir Fried Pumpkin With Sesame Seeds RECIPE

Til or sesame seeds are very good for our health and when added to a stir fry brings a nice texture to the dish too. Here is a simple sweet ripe pumpkin stir fry with aromatic curry leaves and a generous sprinkle of sesame seeds.

Ingredients Serving: 3

  1. Pumpkin (Cut in cubes) - 2 Cups
  2. Curry leaves - 10-12
  3. Mustard seeds - ½ tsp
  4. White sesame seeds - 1tsp
  5. Grated ginger - 1/2tsp
  6. Dry red chili - 3-4
  7. Asafoetida (hing) - A pinch
  8. Turmeric powder - 1 tsp
  9. Salt to taste
  10. Oil - 2 tbsp

Instructions

  1. Peel, wash and cut the pumpkin into cubes. Heat oil in a kadhai, when hot add hing, mustard seeds, dry red chili, curry leaves. As the mustard seeds start to splutter, add ginger, stir.
  2. Add cubed pumpkin, salt turmeric, cover and cook for 7-8 min. Uncover, cook over high heat, sprinkle sesame seeds. Cook for 2-3 min. Serve hot with steamed rice and dal.
