Many times we neglect munching on these nutritious seeds so Podi is a great way to include them in your diet. the inspiration for this recipe came from my mom.

Ingredients Serving: 5

  1. Watermelon seeds - 1/4 Cup
  2. Pumpkin seeds - 1/4 Cup
  3. Urad dal - 1/3 Cup
  4. Dry red chilies - 10 (adjust your spice level)
  5. Curry leaves - 1/2 Cup, packed
  6. Hing / asafoetida - 1/4 tsp
  7. Salt - to taste

Instructions

  1. In a non- stick pan roast the ural dal and once a nice aroma begins to float, switch off the gas and transfer it to a plate spreading it on one side.
  2. similarly roast the chilies and transfer to a plate.
  3. Next add the curry leaves and keep a close watch ensuring that they don’t turn brown. They should just get crisp. Now heat the pan again and switch off. add one type of seeds at a time, roast and transfer to the plate. Add salt and hing to the roasted ingredients and let cool for half hour.
  4. Grind in the chutney jar to a coarse consistency. Your podi is ready to serve. pair it with Quinoa Idli, Lentil Idli, Ragi Idli or even rawa idli.
