ABOUT Malai Kofta in Cashew Gravy RECIPE

Malai kofta is a classic North indian dish. It is a very rich, creamy and delicious dish because koftas stuffed with dryfruits and gravy is made from cashews. It goes well with chapati, naans, pooris and paranthas. No onion no garlic recipe of Malai Kofta.

Ingredients Serving: 4

  1. For Koftas - 200 gm - paneer grated
  2. 1 1/2 tbsp - maida (All purpose flour)
  3. 1- potato boiled and mashed
  4. Stuffing- 5-6 cashews finely chopped
  5. 5-6 - raisins finely chopped
  6. 1 tbsp- coconut (optional)
  7. For Curry- 3/4 cup Kaju (Cashews soak for an hour)
  8. 2 cup milk
  9. 1 cup water
  10. 2 tbsp melon seeds
  11. 2 tbsp- poppy seeds (khas-khas)
  12. 2 tbsp oil
  13. 1 1/2 tbsp sugar
  14. 11/2 tsp garam masala powder
  15. 1/4 tsp cardamom powder
  16. Oil and salt as needed
  17. Garnishing- Paneer grated

Instructions

  1. Add paneer and potatoin a bowl, mix well. Add maida and a pinch of salt, mix well. Knead with greased palms to make the soft dough.
  2. Mix cashew, rasins and coconut in a samll bowl. Divide the dough into equal parts and make balls.
  3. Take on ball, flatten it and place 1/2 tsp stuffing in the centre, carefully wrap from all the side and make round ball. Repeat the process with other balls and make koftas.
  4. Heat the oil in a pan, put the koftas in and cook the koftas until they become light brown in color, keep aside them.
  5. Grind poppy seed and melon seed together in a grinder and make fine powder. Blend the cashew with 1/2 cup milk in a blender. Mix in the seeds powder to make the cashew paste.
  6. Heat oil in a pan, add cashew paste and stir for 7-8 mins on medium gas continuously. Add milk and water. Mix well. Stir for 5-6 mins on medium gas.
  7. Add salt and sugar. Stir for more 1-2 minutes. Add Garam Masala powder and cardamom powder. Stir for few seconds and turn off the gas. Cashew Curry is ready.
  8. Place the koftas in the curry and garnish with some grated paneer.
