ABOUT Malai Kofta RECIPE

Very famous punjabi dish in which potato and paneer balls are dipped in creamy gravy.

Ingredients Serving: 4

  1. For Kofta : Potatoes - 3
  2. Paneer - 1 Cup
  3. Cornflour - 2 tbsp
  4. Salt - as required
  5. Ginger green chilli paste - 1 tsp
  6. Cashew pieces - 1 tbsp
  7. Raisins - 15 to 20
  8. For Gravy : Tomatoes - 2 big
  9. Onion - 1 whole +1 (chopped)
  10. Ginger - 1 inch
  11. Green Chilli - 1
  12. Garlic - 6 cloves
  13. Cashews - 10
  14. Bay leaf - 2
  15. Cinnamon - 1 piece
  16. Cloves - 4
  17. Elaichi - 4
  18. Asafoetida - 1 pinch
  19. Turmeric - 1/2 tsp
  20. Chili powder - 2 tsp
  21. Coriander cumin powder - 2 tsp
  22. Kasuri methi - 1 tsp
  23. Cumin seeds - 1 tsp
  24. Garam masala - 1 tsp
  25. Sugar - 1/2 tsp
  26. Cream - 1 tbsp + 1tbsp

Instructions

  1. Boil the potatoes and grate them. Add grated paneer and all ingredients for kofta together and bind into a dough.
  2. Make small balls out of this mixture. Deep fry on medium heat till they become golden.
  3. Now take roughly chopped tomatoes, onions, garlic, ginger, chilli and cashews in a vessel. Add half cup water and boil. Let this cool and then grind into paste.
  4. Now take oil in a pan. Add all whole spices, cumin seeds, asafoetida and saute. Add chopped onions.Saute till they become translucent. Now add the onion tomato paste ans saute for two minutes.
  5. Add turmeric, chilli powder, coriander powder,salt and crushed kasoori methi. Cook properly till oil releases. Add water according to consistency required and add cream lastly.
  6. Just before serving take a kofta and dip it in the cream and then put in the gravy. Serve hot with chapati, paratha or naan.
