Tofu Red curry (Thai Curry)

Ingredients to make Tofu Red curry (Thai Curry)

  • 1 can coconut milk (Around 13 oz)
  • 1 cup Firm Tofu cubes
  • 1/2 cup water
  • 1/4 cup sliced cabbage and carrots each
  • 1/4 cup sliced Green Bell pepper
  • 1/4 cup basil leaves
  • 1 sliced onion
  • 2 1/2 tbsp red curry paste
  • 1 tbsp oil
  • 1/2 tbsp salt
  • 1 1/2 tsp soya sauce
  • 1 1/2 tsp sugar
  • 1 tsp lemon juice
  • 1 tsp green chili paste
  • 1 tsp ginger paste
  • 1/4 tsp kashmiri red chili powder
  • Garnishing- some finely chopped cilantro

How to make Tofu Red curry (Thai Curry)

  1. Cut the vegetables into slices or cubes (as per choice)
  2. Heat oil in a pan, add onion and stir fry for few seconds on high gas. Add all vegetables and stir fry for 2-3 mins on high gas. (Vegetables should not be tender). Keep it aside.
  3. Heat oil in another pan or same pan, add green chili and ginger paste. Stir for few seconds. Add red curry paste and and basil leaves. Stir for 1-2 mins.
  4. Add coconut milk and mix it properly. Cook for 10-12 mins on medium gas. Add soya sauce, salt , sugar and red chili powder, mix well.
  5. Cook for few seconds. Add water. Mix well and cook for 4-5 mins on medium gas. Add Vegetables and tofu, cook for 3-4 mins on high gas.
  6. Turn the gas off. Add lemon juice. Add cilantro.
  7. Thai red curry is ready to be serve with steamed rice or fried rice.

My Tip:

You can add more vegetables like Peas, french beans, baby corn, yellow bell pepper, green pepper, mushrooms,etc. Adjust red curry paste , sugar and salt according to your taste. Vegetables should not be tender while stirring.
