Thai red curry is the combination of spicy and sweet, its a combination of tofu and vegetables.
Cut the vegetables into slices or cubes (as per choice)
Heat oil in a pan, add onion and stir fry for few seconds on high gas. Add all vegetables and stir fry for 2-3 mins on high gas. (Vegetables should not be tender). Keep it aside.
Heat oil in another pan or same pan, add green chili and ginger paste. Stir for few seconds. Add red curry paste and and basil leaves. Stir for 1-2 mins.
Add coconut milk and mix it properly. Cook for 10-12 mins on medium gas. Add soya sauce, salt , sugar and red chili powder, mix well.
Cook for few seconds. Add water. Mix well and cook for 4-5 mins on medium gas. Add Vegetables and tofu, cook for 3-4 mins on high gas.
Turn the gas off. Add lemon juice. Add cilantro.
Thai red curry is ready to be serve with steamed rice or fried rice.
