An easy recipe of restaurant style crispy vegetables.

Ingredients Serving: 4

  1. 2 cup : Mixed vegetables
  2. For batter : 3 tbsp : All purpose flour
  3. 3 tbsp : Corn flour
  4. 2 tbsp : Rice flour
  5. 1 tsp : Ginger Garlic paste
  6. 1 tsp : Red chilli powder
  7. 1/2 tsp : Pepper powder
  8. Salt to taste
  9. For the spice mix : 1/2 tsp : Coriander powder
  10. 1/4 tsp : Roasted Cumin powder
  11. 1 tsp : Chaat masala
  12. 1/2 tsp : Anardana powder
  13. Chopped coriander (for garnish)optional
  14. Toasted sesame seeds (for garnish)optional
  15. Oil for Deep frying

Instructions

  1. Prepare the mixed vegetables by peeling and cutting into 3 inch pieces. You can use any crunchy vegetables of choice. Here I used baby corn, cauliflower florets, carrots,bell peppers, potato, asparagus and french beans.
  2. In a small bowl add the spice powders I.e coriander, cumin, chaat masala ,anardana powders and mix. Set aside until needed.
  3. In a bowl add the flours, red chilli powder, salt, pepper powder, ginger garlic paste and mix well.
  4. Adding water as needed make this into a flowing batter, not too thin not too thick.
  5. Now add the vegetables to it and fold until coated.
  6. Heat oil in a pan for deep frying.
  7. Once hot add the vegetables one by one until pan is full but not crowded and fry until golden.
  8. Fry all the veggies in same manner and drain them on a paper towel.
  9. Sprinkle the prepared spice mix over the fried vegetables.
  10. Garnish with toasted sesame seeds, chopped coriander and serve hot.
  11. Crispy and delicious starter for any fun filled evening.
