ABOUT Eggplant pizza (Baingan pizza) RECIPE

These mini egg plant pizzas are gluten free, vegan and are very cute and healthy too. We are using mini eggplants as crust and you can top them with your favorite toppings.

Ingredients Serving: 2

  1. 1 - Large egg plant, sliced in to half inch rounds
  2. 2-3 tbsp - Olive oil
  3. 3-4 tbsp - Pizza sauce
  4. Favorite toppings
  5. 5-8 tbsp - Grated cheese
  6. Salt - to taste
  7. Chilli flakes - to taste

Instructions

  1. Cut egg plant in to half inch rounds and sprinkle sea salt on them.
  2. Coat with oil on both sides and bake at 200 degree centigrade for 10 to 15 minutes.
  3. Remove from the oven and apply pizza sauce and your favorite topping spinach/mushrooms/capsicum.Add your favorite spices and herbs.I used chilli flakes, red chilli powder and salt. You can even add green chilies.
  4. Add grated cheese on the all slices. Bake for 5 minutes until cheese melts.
  5. Enjoy the eggplant pizza when it is hot.
