ABOUT Kaddu Ka Meetha | Yellow Pumpkin Halwa RECIPE

Pumpkin is popularly known as Kaddu in Northern India and this delicious Kaddu ka Meetha is one of my favorite vegetable based traditional desserts. The ripe kaddu, gives this dish a unique flavor that will linger in your memory for quite some time.

Ingredients Serving: 4

  1. Grated Ripe Orange Pumpkin – 2 &1/2 cups
  2. Full Fat Milk -1/2 cup
  3. Sugar – 1/2 cup
  4. Cardamom Powder – 1 teaspoon
  5. Cashew nuts – 10-12 Chopped
  6. Almonds ( blanched) – 10-12 Chopped
  7. Golden Raisins – 10
  8. Ghee (Clarified Butter) – 1/4 cup

Instructions

  1. Soak the almonds in warm water, peel the skin and cut very fine . Keep aside with the raisins.
  2. Roast the cashews in ghee until it becomes golden brown. Keep aside.
  3. Wash peel, core and grate ripe yellow pumpkin.
  4. Heat 1 tablespoon of ghee in a thick bottomed pan.
  5. Add the grated pumpkin to it and stir well on low flame till the raw flavor is gone and the color changes to slightly golden.
  6. Add milk and cook till the pumpkin is tender and the mixture thickens a bit.
  7. Add sugar and stir constantly on low flame. The sugar will leave water so keep cooking till the water dries out.
  8. Add rest of the ghee to it and stir well, put in low flame till the mixture leaves the sides and the aroma begins to fill the air around you.
  9. Add the roasted cashews, almonds, raisins and grounded cardamom mix well and leave it for 5 minutes. The halwa will turn glossy at this point.
  10. Once the halwa leaves the sides turn off the heat and remove it on the counter.
  11. Garnish with more dry fruits and nuts. Serve hot
