ABOUT Qatayaf RECIPE

Qatayef is an Arab sweet dumpling filled with a sweet cheese and nuts stuffing. It is fried and then drizzled with sugar syrup. Try this unique and variety dish this diwali!

Ingredients Serving: 4

  1. 3 Table spoon Corn Starch
  2. 2 3/4 cup cold water
  3. 2 cups flour
  4. 1/2 Cup Semolina
  5. 3 Tablespoon Sugar
  6. 3 Teaspoon baking powder
  7. 1/2 cup White Cheese Unsalted
  8. A handful of Walnuts chopped
  9. A handful of Cashews chopped
  10. 1 Teaspoon Cinnamon
  11. 3 cups Sugar+ 2 Tablespoon
  12. 11/2 Cup Water
  13. 1 Teaspoon Lemon
  14. 3 Tablespoon Orange blossom water(Optional)
  15. Pistachios for garnishing

Instructions

  1. Mix the flour, semolina, sugar and baking powder. Dissolve corn starch in cold water. Gradually add the starch/water mixture to the flour mixture and mix well. Set aside for 30 minutes.
  2. In a sauce pan, combine 3 cups of sugar, 1 1/2 cups water, orange blossom, lemon juice and stir until the sugar dissolves. Bring to a boil and simmer until the syrup thickens.
  3. Heat a frying pan or griddle, using a ladle or scoop, pour enough batter to make 3 - 5" inch pancakes.
  4. Cook until the pancake starts bubbling on top then remove from the pan and set aside. (Cook on one side only).
  5. In a bowl, combine cheese, sugar, cashews, walnuts and cinnamon. Fill each pancake with this cheese and nuts mixture, fold it in half and press to seal the edges.
  6. Fry the Qatayef on both sides till it becomes golden brown in colour.
  7. Dip into the syrup for 2 minutes. Garnish with pistachios and serve.
