ABOUT Stuffed Spinach kofta in Cashew Tomato gravy (Healthy Kofta) RECIPE

Spinach kofta with paneer filled with dry fruits in a cashew-tomato gravy. It is a rich dish which goes well chapati, naan, puri, parantha and rice. i am giving ha healthy kofta recipe here.

Ingredients Serving: 4

  1. 1 & 1/2 cup - spinach finely chopped
  2. 3/4 cup - paneer grated
  3. 1- Potato medium size boiled mashed
  4. 1 tsp - green chili paste
  5. 1 tsp - grated ginger or ginger paste
  6. For Stuffing: 1/2 cup - cashews+raisins+almonds
  7. 1 & 1/2 tsp - coconut powder
  8. 1/4 tsp - cardamom powder
  9. For Gravy: 1/2 cup - cashews
  10. 2 tomatoes
  11. 1 green chili
  12. 1 cup - cream
  13. 1/2 tsp - garam masala powder
  14. 1/4 tsp - red chili powder and coriander powder each
  15. A small piece of ginger
  16. Garnish: paneer & cilantro

Instructions

  1. Add spinach, paneer, potato, chilli, ginger and salt in a bowl, mix to make a dough. Knead the dough with greased palms, keep aside.
  2. In another bowl, add all stuffing ingredients and mix well. Divide the dough into equal parts and make balls.
  3. Take one ball and flatten it and place 1/2 tsp stuffing, wrap from all the side and make round ball. Repeat the process with other ball and make koftas
  4. On a pan put the koftas, sprinkle drops of oil on each kofta and cook on medium gas for 10-12 mins.
  5. Heat oil in a pan,add tomato, cashew, onion, green chili, ginger and some water, cook for 5 min. Keep aside & cool it . Blend the tomato mixture in a blender and make puree.
  6. Heat oil in a pan, add tomato puree, red chili powder, coriander powder and cook for 7-8 mins on medium gas.
  7. Add sugar, garam masala and cream, stir for 2-3 mins. Add salt, cook for few seconds more. Turn off the gas and dd a pinch of cardamom powder.
  8. Put the Kofta in the curry, garnish with some grated paneer and cilantro. Serve hot.
