Ingredients to make Zarda

  • 500g basmati rice, (soaked for atleast 1 hour)
  • 6 cardamoms
  • 1 bay leaf
  • 2 cinnamon sticks
  • 4 cloves
  • 1/4 cup pistachio
  • 100g ghee
  • 500g sugar
  • 1 tsp yellow food coloring
  • 1/2 cup raisins
  • 5ml rose water 5ml kewra water 1drop sweet attar 1/2 lime juice
  • finely sliced 1/2 cup almond
  • finely sliced 1/2 cup cashew nuts
  • 1g saffron

How to make Zarda

  1. Boil rice in water with the food coloring. Drain when the rice is 70% cooked. Spread it on a big tray and allow it cool. Cook sugar with 250 ml water add lime juice.
  2. Add ghee in a Lagan, fry cardamom,Cinnamon,bay leaf and cloves. After the sugar has dissolved made in the above step, mix it into the lagan and cook for further 5 minutes.
  3. Add rose,kewra ,sweet attar,saffron and par boiled rice, seal the Lagan lid with a dough and cook it on slow flame until 45 minutes till the sheera ( syrup) dries up. Mix gently and serve , Garnish with fried nuts & silver leaf.
  4. I have added gulab jamuns instead of khoya, its a small twist in the recipe by me.
