ABOUT Aam Srikhand or Aamrakhand RECIPE

Shrikhand originates mainly from Maharashtrian Cuisine. Shrikhand is quite popular across India made Or eaten in almost all households, weddings and festive occasions.And Aam Srikhand or Amrakhand means Amra = Mangoes.Hence Mango Shrikhand. This recipe is amazing and it’s so easy to make. It is thick, creamy, soft, supple, delicious.It is a nice dessert to savour or else it tastes best with hot purees.

Ingredients Serving: 2

  1. 2 mangoes (aam), peeled and chopped
  2. 1 to 1.5 cup curd (yogurt or dahi) or curd made from half a litre of milk
  3. 1/2 tsp of crushed nutmeg
  4. 2-3 crushed green cardamoms (choti elaichi),
  5. Sugar - as required (usually double the curd)
  6. Small pieces of mango,raisins and nuts/pistachios/almonds for garnishing.
  7. (I have used a measuring cup, where in 1 cup = 250 ml)

Instructions

  1. Hung curd is the most important ingredient to make the Srikhand. Firstly, hang the curd in a muslin, cheese cloth or kitchen napkin for 3-4 hours .Let the whey flow down.Unwrap the cloth. Now,the hung curd is ready.
  2. Grind the sugar finely to form powder.
  3. Take a pan and place on low heat. Add green cardamoms and crushed nutmeg in the pan. Roast for 4 to 5 mins on low heat. Combine them into a processor and grind until fine powder is formed.
  4. Make a smooth puree of the mangoes using a blender.
  5. Add the thick hung curd to the mango puree along with cardamom-nutmeg powder and sugar. whisk until fluffy and smooth.
  6. The Srikhand is ready to serve now.So,pour shrikhand in individual serving bowls.
  7. Sprinkle some nutmeg-cardamom powder on top.
  8. Garnish with small mango pieces,raisins and nuts or pistachios or almonds.
  9. chill for 3-4hours and serve the Srikhand or aamrakhand.
