ABOUT Roasted Pumpkin Soup RECIPE

Roasted pumpkin soup is a creamy and healthy soup. Roasting of pumpkin gives a wonderful flavour to the soup.

Ingredients Serving: 2

  1. Pumpkin - cut into medium blocks, 2 cups
  2. Onion - 1/2 cup, chopped
  3. Garlic - 5 to 6 pods
  4. Butter - 1 tablespoon
  5. Salt to taste
  6. Milk - 1 cup
  7. Black Pepper Powder - 2 teaspoon

Instructions

  1. Melt butter in a pan and add pumpkin cubes, onion and garlic. Roast them well.
  2. Now add water and put them in a pressure cooker. Allow to cook umtil two to three whistles.
  3. After releasing the pressure, strain the stock and keep it aside.
  4. Now make a puree of boiled pumpkin, onion and garlic.
  5. Take the puree in a pan and add the stock, milk and bring it to boil.
  6. Add salt and pepper powder. Serve hot.
