ABOUT Doi Maach (Fish in yogurt gravy) RECIPE

The curry is robust, slightly spicy and delicately sour with the curd and spices and fully aromatic.

Ingredients Serving: 4

  1. 1/2 kg Rohu Fish washed
  2. Yogurt 3/4 cup
  3. Ghee 1/8 cup
  4. Onin 1/4 cup
  5. Black peppercorns 3to 4
  6. Bay leaf 1
  7. Green Cardamom 2
  8. Cinamon 1/2 inch stick
  9. Cloves 1
  10. Turmeric powder 1/2 tsp
  11. Ginger paste 1 1/2 tbsp
  12. red chilli 1/2 tsp
  13. Green chilli 2 no.
  14. Raisins 1/3 cup
  15. salt as per taste

Instructions

  1. Combine 1/3 cup of yogurt and turmeric powder in a bowl.
  2. Marinate the fish with little salt and turmeric and keep aside for 10 minutes.
  3. Heat ghee in a pan and saute pan until 3/4 done and keep aside.
  4. Now in the remaining oil add clove,cardamom ,bay leaf,peppercorns ,cinnamon fry for few minutes.
  5. Add onion and ginger paste, fry till light brown.
  6. Now add little water and keep the flame low and then add whisk yogurt, green chilli, red chilly powder and some more water and cover the pan.
  7. after few minutes add fish fillet and cook for some more time until its done completely.
  8. Add salt and raisins and stir, mix well and serve with steam rice.
