ABOUT Chicken Rezala - A Mughlai Dish RECIPE

Chicken Rezala - A Mughlai Dish, is very famous in the west bengal. It used the juices of ginger and onion, and makes a lipsmacking recipe of chicken to be served with some steamed rice.

Ingredients Serving: 6

  1. 1 kilo chicken
  2. 2 and half cups beaten curd
  3. 3 big onion - ground to a fine paste
  4. 3 medium onion- chopped into julians, soaked in milk and deep fried. (I skipped to reduce fat content and instead fried in the oil).
  5. 1 tsp cumin seeds (I added to the original recipe)
  6. 1 tsp fennel seeds (I added to the original recipe)
  7. 1 tsp turmeric powder
  8. 1 tsp red chili powder
  9. 1 tsp cumin powder
  10. 1 tsp garam masala powder
  11. 1 cup chopped coriander
  12. 1 tbsp dry mint leaves (I added to the original recipe)
  13. 5-6 green chilies blanched. The sharp taste of chilies and curbed this way.
  14. 3 table spoon - ground poppy seeds(khuskhus)
  15. Salt to taste
  16. 3 tbsp oil

Instructions

  1. Heat oil in a pan and cook the chicken pieces till they turn brown. Remove chicken and keep aside.
  2. Add sliced onions and fry till onion turns pink.
  3. Add ground onions and everything turns brown.
  4. Add cumin seeds and fennel seeds.
  5. Add ground poppy seeds, curd and chopped coriander leaves
  6. Add cumin powder, turmeric powder, cumin powder and garam masala powder
  7. Add roughly broken green chilies . Add salt to taste. Add dry mint leaves. Cover and cook till chicken is done.
  8. Tastes best with chapatti
