ABOUT Mutton Ghee Roast RECIPE

Mutton Ghee Roast is a very popular side dish of South India. It is a delicious and beautiful flavored dish from the ghee and spices.

Ingredients Serving: 3

  1. Mutton - 400 gms
  2. Peppercorns - 1 tsp
  3. Green chilly - 3 chopped
  4. Ginger  - 1 inch chopped 
  5. Garlic - 6 cloves chopped 
  6. Lemon juice - 1 tsp 
  7. Cinnamon - 1 small stick 
  8. Cardamom - 2
  9. Cloves - 3
  10. Star anise - small piece
  11. Dry chilly - 3 whole
  12. Cumin seeds - ½ tsp 
  13. Onion - 2 medium finely chopped
  14. Coriander powder - 1 tsp 
  15. Turmeric powder - 1 tsp 
  16. Chilly powder - 1 tsp 
  17. Garam masala - 1 tsp 
  18. Fennel powder - 1 tsp 
  19. Tomato - 1 large finely chopped
  20. Water - 1 cup 
  21. Curry leaves - 1 sprig 
  22. Salt to taste 
  23. Ghee - 3 tbsp
  24. Chopped coriander leaves

Instructions

  1. Grind together peppercorns, green chilli, ginger, garlic with little water to a fine paste.
  2. Add the ground masala, lemon juice and salt to cleaned mutton pieces. Marinate it for 30 mins to 1 hour.
  3. Take the pressure cooker and add the marinated mutton and 1 cup of water. Pressure cook for 10 mins. Let the pressure release by itself. Open the cooker and if there is any liquid, evaporate it completely.
  4. Heat ghee in a pan. Add the whole spices, red chillies, curry leaves and saute for a min.
  5. Add the sliced onions and cook till it turns soft. Add the tomato and saute till it turns mushy.
  6. Add all the masala powders and salt if required and fry for a min.
  7. Add the cooked mutton, stir and mix well coating the mutton with the masalas and roast on low heat for about 5 mins stirring frequently.
  8. Increase the flame to medium-high heat and roast further stirring frequently for about 10 mins.
  9. Add chopped coriander leaves, give a quick stir and take off the heat.
  10. Garnish with more coriander leaves and serve.
