ABOUT Palak Paneer Biryani RECIPE

Greeny spicy biryani with crisp fried onions.

Ingredients Serving: 6

  1. For fried paneer:
  2. Paneer cubes
  3. Salt
  4. Hung curd
  5. 1/2 teaspoon red chilli powder
  6. 1/2 teaspoon dhanya powder
  7. 1/2 teaspoon garam masala
  8. Turmeric
  9. butter
  10. For palak paste:
  11. 1 bunch palak
  12. 5 Green chillies
  13. Little Ginger
  14. Little garlic
  15. For Biryani:
  16. 1 glass basmati rice
  17. oil
  18. 1 inch cinnamon
  19. 5 cloves
  20. 2 cardamom
  21. 1/2 teaspoon fennel seeds
  22. 2 mogu
  23. 1 star anise
  24. 2 lenght wise sliced Onions
  25. 2 tomatoes finely chopped
  26. Few mint leaves
  27. Few coriander leaves
  28. 1/2 teaspoon red chilli powder
  29. 3/4 teaspoon dhanya powder
  30. 1/2 teaspoon garam masala
  31. Pinch of turmeric
  32. Salt
  33. 1.5 glass Water
  34. For fried onions:
  35. oil
  36. Little sugar
  37. 1 length wise sliced onion

Instructions

  1. For fried onions: in a kadai add little oil. When oil is heated, add in finely chopped (length wise) onions, pinch of sugar and fry it till crisp. Keep aside
  2. For fried paneer: firstly marinate the paneer. In a bowl add paneer cubes, salt, hung curd, red chilli powder, dhanya powder, garam masala and turmeric. Mix well and refrigerate for 2 hours.
  3. Then in a pan, add in butter, marinated paneer and fry till the masala is cooked. Keep aside.
  4. After onions are crisp, in the same kadai add in few cashews and fry. Keep aside.
  5. In a pan, add in cleaned palak and green chillies. Blanch it till the palak is done. Now cool the same. Add in ginger garlic and grind it. Keep aside.
  6. In a cooker, add oil. Throw in cinnamon, cloves, cardamom, fennel seeds, Mogu and star anise. Fry it.
  7. Add in onions. Fry till soft. Add in red chilli powder, dhanya powder, garam masala and turmeric. Fry till done.
  8. Add in tomatoes and salt. Fry till done.
  9. Add in finely chopped coriander leaves and pudina (mint leaves).
  10. Add in grinded palak paste. Fry till the masala is cooked completely.
  11. Add in water. Bring it to boil. Check for the seasoning.
  12. Add in soaked and washed basmati rice. Gently mix.
  13. Put on the lid and cook it for 1 whistle. Allow it to cool completely.
  14. Once pressure is released, open the lid. Gently mix.
  15. Now add in fried onions, fried paneer, cashews and mix gently. Close the lid for 5 minutes. (Let all the flavours get together well).
  16. Serve hot..
