SPICY PRAWN RICE

ABOUT SPICY PRAWN RICE RECIPE

I serve this Malwani prawn rice with a curd raita and papaddums.

Ingredients Serving: 6

  1. Fresh medium sized prawns 20-25
  2. Good quality basmati rice 400 gms (cooked al dente)
  3. Onions finely chopped 5-6
  4. Garlic finely chopped 8-10 cloves
  5. Coriander leaves finely chopped 1 large bunch
  6. Turmeric powder 1 tsp
  7. Malwani masala powder 3 tsps
  8. Sugar 1/2 tsp
  9. Salt to taste
  10. Oil about 50 ml

Instructions

  1. Clean and de-vein the prawns. Keep aside.
  2. In a large pan, heat the oil. Add garlic and onions and saute until they turn golden.
  3. Add turmeric powder and malwani masala. Roast for a minute on low heat.
  4. Throw in the prawns, coriander leaves, salt and sugar. Mix well and let simmer until the prawns are almost cooked. (You can add a bit of warm water if the mixture looks too dry)
  5. Add the cooked rice and mix until all the grains are coated with the masala. Cover the pan and leave it on minimum heat for about 5 minutes. (a cooking guage works well, if you have one).
  6. Serve hot with a vegetable raita and pappadums.
