ABOUT Bhel Puri RECIPE

Another one of the family's most wanted snacks. Equally light and tasty.

Ingredients Serving: 4

  1. 1 cup - puffed rice/Laiya
  2. 1/4 cup - finely chopped deseeded ripe tomatoes
  3. 1/2 cup - finely chopped onions
  4. 1 tsp - grated ginger
  5. 1 cup - crushed mathri
  6. 1 1/2 cups - sev
  7. 3-4 tbsp green chutney
  8. 2-3 tbsp red chutney/sweet chutney
  9. 1/2 tsp of black salt (optional)
  10. 1/2 tsp - chaat masala
  11. 1/2 tsp - garam masala
  12. 1/4 cup - roasted peanuts (salted or unsalted)
  13. 1/4 cup of chopped coriander leaves
  14. juice of 1 lemon
  15. 1/4 cup - matar soaked and boiled
  16. For Green chutney:
  17. coriander leaves (cilantro) - 1 bunch
  18. mint leaves - 1/2 of 1 small bunch
  19. green chillies - 2 or 3
  20. chopped onion - 1
  21. 2 cloves of garlic
  22. chaat masala as per choice
  23. sugar just to taste
  24. juice of 1/2 lime
  25. For the sweet chutney:
  26. Small lime-sized ball of tamarind
  27. 5 or more dates pitted and roughly chopped
  28. red chilli powder
  29. fennel powder
  30. dry ginger powder (Sonth)
  31. jeera powder
  32. Coriander powder (optional)
  33. A pinch of garam masala
  34. Salt to taste
  35. Water as per desired consistency

Instructions

  1. I had prepared the chutneys before hand. You can alter their taste as per your choice. The amount of sweetness, salt, chilli, consistency etc.
  2. Boil the matar and sprinkle some salt and chat masala. Keep aside.
  3. Add all other ingredients in a wide bowl.
  4. Add in the matar. Whisk a little by a spoon or a spatula. Taste, adjust the taste and whisk again.
  5. Garnish with sev and fresh coriander
  6. Serve immediately as it might become soggy.
