Sweet potato spiced cake with nutella frosting

Ingredients to make Sweet potato spiced cake with nutella frosting

  • 1 cup sweet potato (boiled and mashed )
  • 1 cup + 6 tbsp all purpose flour (maida)
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • salt 1/4 tsp
  • 1 tsp cinnamon powder
  • 1/2 tsp ginger powder
  • 1 tsp vanilla essence
  • Nutella as desired
  • walnuts as desired

How to make Sweet potato spiced cake with nutella frosting

  1. Sieve together the flour,baking powder,baking soda, ginger powder,cinnamon powder and salt.
  2. Grease a 4" cake tin. Preheat the oven at 175 degree celsius .
  3. Whisk the sugar and eggs together until the sugar is completely dissolved.
  4. Next add in vanilla essence, oil and sweet potato puree, whisk this mixture well.
  5. Now slowly add in the sieved flour in 4- 5 lots. Pour the batter into a greased tin, tap it and level with a spatula
  6. Bake at 175 degrees for 50 - 60 minutes or until the tester comes out clean.
  7. Cool cake in the tin for 15 minutes and transfer to a rack to cool completely.
  8. Once the cake cools to room temperature, frost it with nutella and garnish with chopped walnuts and serve warm.

My Tip:

Cakes with pureed vegetables usually bake long as compared to other cakes.
