Ingredients Serving: 7

  1. Chicken Minced– 300 gm
  2. Chese – 2 slices, grated
  3. Onion- 1 piece (roughly chopped)
  4. Garlic – 4 cloves (roughly chopped)
  5. Pepper powder- 1 tsp
  6. Green chillies- 3 pieces (roughly chopped)
  7. Cornflour – 4 tbsp ( you can add more if required to make the kofta balls)
  8. Salt- as per taste
  9. Sugar- 2 tsp
  10. Coriander powder- 1 tsp
  11. Cumin Powder- 1 tsp
  12. Oil– for deep frying (if you wish you can sauté it as well)
  13. For the gravy:-
  14. Ghee- 2.5 tbsp
  15. Oil- 2 tbsp
  16. Garlic- 1 and 1/2 tbsp
  17. Ginger- 1 tbsp
  18. Whole garam masala– Cinnamon stick (1/2 inch), Green cardamoms (2 pieces), Cloves (2 pieces), Bay leaf (1 leaf)
  19. Tomatoes- 2 medium sized (sliced)
  20. Onion – 2 big sized (sliced)
  21. Coconut milk- 1 cup (60 ml)
  22. Cashew & Melon seed paste- 2 tbsp
  23. Salt- as per taste
  24. Turmeric powder- 1 & 1/2 tsp
  25. Red chilli powder- 2 tsp
  26. Sugar- 2 tsp
  27. Nutmeg powder- 1/4 tsp

Instructions

  1. To make the kofta, take a pan, add 3 cups of water and 2 tsp of salt to it. Let this come to a boil.
  2. Next, add the minced chicken and cover it with a lid. Let it boil for another 7-8 mins. Then drain the water.
  3. Now take a large bowl, add all the ingredients of the kofta, except the oil. Make a semi-smooth dough (which has very little chunks) then make round shaped balls out of it. Keep this in the refrigerator for a minimum of 2-3 hours
  4. Take a kadhai, add oil to heat. Now add these balls into the hot oil and fry till they are golden brown in colour. Keep it aside.
  5. To prepare the gravy, take a pan and add oil to heat. Then add the sliced onion and fry till it gets a nice golden colour. Keep it aside. Make a smooth paste of this by adding a little warm water.
  6. In an another pan, add ginger, garlic, tomato, cashew and melon seeds with water. Bring it boil and make a smooth paste out of it.
  7. Now take a pan, add in ghee and oil to heat, then add the whole garam masala to develop a nice aroma.
  8. Add the ginger, garlic and tomato paste, stir it nicely. Then add the fried onion paste and keep stirring.
  9. Next add the dry powder masalas, turmeric powder and red chilli powder. Once the oil gets separated, add the cashew and melon seed paste, stir it gently.
  10. Add the sugar and salt along with the coconut milk and nutmeg powder. If the gravy gets too thick, pour in some water (or you can skip it). Let it boil for 3-4 mins and turn off the flame.
  11. Pour the gravy over the kofta and serve it. You can also add some fresh cream on top of it.
