ABOUT Boondi Ladoo RECIPE

Ladoos – As soon as we hear this word, there is a spark in our eyes. A traditional delicacy that is prepared from besan. Boondis are fried, then soaked in sugar syrup and then formed into ladoo.

Ingredients Serving: 4

  1. For Besan Batter
  2. 2 cups besan/chickpea flour
  3. 1-1.5 cups water
  4. Pinch Of Baking Soda
  5. 1 tablespoon ghee
  6. For sugar syrup
  7. 2 cups sugar
  8. 1 Cup water
  9. Few drops of lemon juice
  10. ½ teaspoon cardamom powder/elaichi powder
  11. Other ingredients
  12. Oil/ghee for frying
  13. 1 tablespoon ghee
  14. 4-5 cashews, chopped
  15. 4-5 almonds, chopped
  16. 8-10 raisins

Instructions

  1. For Besan Batter
  2. In a bowl, sieve besan.
  3. Add water gradually to make a smooth flowing batter. First add 1 cup water and whisk well. Then if you find the batter thick, add more water as required. Quantity of water will depend on the type of besan.
  4. Keep the batter aside for 15-20 minutes.
  5. Now add ghee and pinch of baking soda. Whisk well and keep the batter aside.
  6. For sugar syrup
  7. In a pan, take 2 cups of sugar and to it add 1 cup of water. Cook on a medium flame for 2-3 minutes. Then add few drops of lemon juice to the syrup, to prevent it from getting crystallised.
  8. Mix well and keep boiling till you attain syrup of 1 string consistency.
  9. For making Boondi
  10. For making boondis, you will require 2 ladles : 1) a ladle with small holes in it and 2) a round ladle to pour the batter
  11. Hold the ladle with small holes in it over hot oil. Pour the batter with the help of a round ladle on the other ladle with small holes directly in hot oil.
  12. Fry till boondis are cooked. Don’t make them crisp.
  13. Remove fried boondis from oil with a slotted spoon and soak them in sugar syrup directly.
  14. Soak for 2-3 minutes and then remove the first batch of sugar syrup soaked batch of boondis in a wide bowl.
  15. Repeat the same steps to make boondis from the remaining batter.
  16. Making Ladoos
  17. Add all the soaked boondis (that we have kept in a bowl) to the remaining sugar syrup and heat the mixture on a medium flame for 2-3 minutes.
  18. Switch off the flame and add 1 tablespoon ghee and chopped nuts & raisins to the boondi mixture and mix well.
  19. Make ladoos taking a small amount of boondi mixture between your palms.
  20. Serve and enjoy these yummy ladoos.
