ABOUT Rabri Malpua RECIPE

Rabri Malpua is a sinful combination that will double your festive mood with joy and triumph. Serve the hot malpua with cool rabri, it is simply irresistible!

Ingredients Serving: 6

  1. Sugar syrup: 1 and 1/2 cup sugar
  2. Water 1 cup
  3. Cardamom powder 1/4 tsp
  4. Malpua Batter: 1 cup plain flour
  5. 1/4 cup semolina/ suji
  6. 1/4 tsp baking powder
  7. A dash of baking soda
  8. Clarified butter/ Oil to shallow fry
  9. Fennel seeds/ saunf/ mouri - 1 tsp
  10. 1/2 tin or 200 gms of condensed milk
  11. For Rabri: 1 litre Milk
  12. Sugar to taste

Instructions

  1. To make the sugar syrup: Put 1 and 1/2 cup of sugar and 1 cup of water in a saucepan. Also add in 1/4 tsp of cardamom powder.
  2. Put this saucepan on a gas and make a thin syrup out of this mixture.
  3. For the malpua batter: Put all dry ingredients into a bowl, plain flour/ maida, 2 tbsp semolina/suji, 1/2 tsp baking powder and a dash of baking soda. For flavour add the fennel seeds/ saunf.
  4. Give these ingredients a good stir so that they combine well together.
  5. Next put some of the rabri, condensed milk and finally milk into it. Make this batter of a pouring consistency. Keep it aside for 30 minutes
  6. During this time it will thicken up a little. Heat the clarified butter, and put 1 big spoon of batter in hot ghee.
  7. The next step is to shallow fry them. Then soak them in the sugar syrup.
  8. Before serving, take out the malpua from sugar syrup in a plate. Top it with rabri and it is ready to be served.
  9. To make the rabri: Bring the 1 liter whole milk and sugar to a boil and reduce until it becomes thick and almost dries up. Next put in the cardamom powder/ rose essence or any other flavor that you like.

It turned out really good..it's nice to eat even by itself without the sugar syrup or rabri
