Peach Phirni

Ingredients to make Peach Phirni

  • Milk 1 liter
  • Basmati rice 1/4 cup
  • Peaches, medium sized 2
  • sugar 3/4 cup
  • cardamom powder 1/2 teaspoon
  • Few saffron strands soaked in 1 tablespoon warm milk
  • Peach chunks, mint leaves, nut of your choice for garnish

How to make Peach Phirni

  1. Wash rice, soak it for half hour.
  2. Soak some saffron in 1 tbsp of warm milk.
  3. Wash the peaches, remove the skin and blend it in food processor/blender.
  4. Keep the fruit puree aside
  5. Take the remaining milk in a thick bottom pan and allow it to boil on medium heat.
  6. Meanwhile, drain and grind the rice to a very fine paste adding very little amount of water to it.
  7. Add the rice paste to boiling milk, lower the flame and keep stirring the mixture continuously to avoid lump formations.
  8. Stir until rice gets cooked completely.
  9. Add cardamom powder, saffron, and sugar.
  10. Cook on sim flame till the mixture becomes semi thick in consistency.
  11. Turn off the heat and allow the mixture to cool down.
  12. Now add the peach puree gently to the milk rice paste and mix it well.
  13. Transfer into serving bowls, garnish with garnishing ingredients as mentioned above.
  14. Refrigerate and serve it chilled.
