ABOUT Dhaba Chicken Kadahi/Karahi.. RECIPE

This kadahi reminds us of the authentic Punjabi style cooking with rich whole spices as in every dhaba style dish. This dish is served in almost all the dhabas (roadside restaurants) that line the highways in Northern India. Succulent and juicy chicken cooked in tangy tomatoes and whole spices give this dish an awesome flavour that will make you say, 'ooh la la'.

Ingredients Serving: 5

  1. chicken 1 kg
  2. onions chopped 3
  3. Garlic cloves minced 2
  4. ginger 1" piece peeled and chopped
  5. salt to taste
  6. turmeric 1/2 tsp
  7. Red chilli powder 1 tsp
  8. Cayenne pepper 1 tsp
  9. Ground coriander 1 tbsp
  10. Ground cumin 1 tbsp
  11. Ground cloves 4
  12. cinnamon sticks to 3
  13. Ground cardamom 4
  14. tomatoes chopped 3
  15. FOR GARNISHING.....
  16. coriander leaves chopped few
  17. Green chillies chopped 1 tbsp
  18. ginger juliennes few

Instructions

  1. Process the onions,ginger and garlic.
  2. In a cooking pot, heat the oil and add the whole spices.
  3. After a minute, add the onion mix.
  4. Saute until it gets a light pinkish colour.
  5. Add the chicken and let it cook on low flame.
  6. After about 15 minutes, add the chopped tomatoes
  7. Add water only if required.
  8. Water should be added if you desire a little thin consistency gravy.
  9. Simmer on till the chicken gets cooked and the gravy thickens a bit.
  10. I did not add any water as the tomatoes leave a lot of water.
  11. Garnish with coriander, green chillies and ginger juliennes.
