ABOUT BHANORIE (Konkan Special Pancakes) RECIPE

This is a very unique and tasty dish from the konkan belt of maharashtra. When it comes to kokani cuisine the recipes/ names differ from region to region. I got three recipe and two different names for this dish. I followed the easiest one and sharing it here.

Ingredients Serving: 5

  1. 1 kg semolina
  2. 3 eggs
  3. 400 grams sugar
  4. 300 ml coconut milk
  5. 1 teaspoon cardamom powder
  6. 1/4 teaspoon saffron
  7. 1 teaspoon salt
  8. 1/4 teaspoon instant yeast
  9. Ghee/ oil for brushing.

Instructions

  1. Heat water in a pot (around 2 cups). When it comes to boiling point add 250 grams of the semolina. Let it cook. Be careful there are no lumps. Keep it a bit runny.
  2. Let it cool. Then add in the sugar and coconut milk.
  3. Whisk eggs with saffron and cardamom so that you get rid of the smell. Add this to the mixture.
  4. Add in the remaining semolina. Make a thick batter of pourable consistency.
  5. Put in the yeast and let it ferment. It took me two hours
  6. Heat a wok or non stick pan. Brush with ghee/ oil. Pour a ladle or two of the batter. Cover and let it cook like a pancake. You can flip the sides of you want it browned from both the sides.
